The present composition is a charming example of two related disciplines to the practice of art in the 17th Century: cooking, with the performative nature of the baroque banquet, and natural science, exemplified here in the empirical observation by artists of birds. The present lot depicts a tetra lyre (black grouse), a species especially prevalent in Waloonia, upon an ornate pie. The 1650s saw pirated publications in the Low Countries of the first major works by the pastry chefs associated with the French court.
Cossiers was a pupil of Cornelis de Vos (1585–1651), before spending a period in Aix-en-Provence with Abraham de Vries (1590–1650). He later travelled to Rome where he is recorded in October 1624. There was influenced by Caravaggesque low-life genre painting. On his return to Flanders he painted several feasting scenes and appears to have developed a freer painting style.
